POTLUCK RECIPES: SUMMER EDITION

Summer is almost here! Get ready for all the upcoming cookouts and barbecues with some recipes that will not disappoint. Our Squad is here to share their delicious go-to dishes that will surely be a hit and guarantee an invite to the next one. 

SPAGHETTI PICCHI PACCHI

Picchi Pacchi has always been my favorite pasta for hot summer days. And it’s quick to make! My parents used to make this for us all the time when I was a kid. I love to add shrimp to the dish to add some protein. For this page, I used my Happy Planner Recipe Keeper paired with the Southern Farmhouse Value Pack Stickers and Foodie 8-Page Sticker Pack. 
 
Ingredients: 
5 Red ripe tomatoes 
10 Fresh basil leaves, cut into julienne 
Red chili pepper flakes, to taste 
2 Garlic cloves, minced 
1/4 - 1/2 cup Extra virgin olive oil 
1/4 lb Aged provolone cheese, grated 
1 lb Spaghetti 
 
Directions: 
1. Remove stem ends from tomatoes; cut into 1/2 inch dice. 
2. In a small bowl, mix the tomatoes, basil, red chili pepper flakes, garlic, and olive oil. 
3. Stir, cover, and let rest for at least one hour. 
4. Cook spaghetti when ready to serve until al dente; drain. 
5. Toss the tomato mixture with the spaghetti. 
6. Sprinkle provolone over the pasta. Serve immediately. 

PASTA SALAD

Pasta Salad is my favorite summer recipe and is always a hit at every gathering! The best part about this salad is that you can customize the ingredients to suit different tastes or dietary needs. I like to bring in vegetables of all different colors for a vibrant and beautiful dish. Using the Ingredients Skinny Classic Filler Paper, I created my grocery list to make sure I would have everything I needed when I went to the grocery store.  

Ingredients:
10 oz tri-color rotini
1 Red pepper
1 Yellow pepper
1 can Black olives
Suddenly salad seasoning
12 oz Mozzarella
1 pint Grape tomatoes
7 oz Pepperoni
15 oz Balsamic Vinaigrette

Directions: 

  1. Prepare ingredients and chop
  2. Cook pasta al dente
  3. Once cooled, combine pasta with chopped ingredients
  4. Toss in balsamic vinaigrette dressing

My secret ingredient is salad seasoning- It adds a delicious pop of flavor! This dish is best when you prepare it the night before, which gives the salad time to marinate in the dressing so each bite is as flavorful as the next. 

GRILLED POTATO SALAD

The weather is getting warmer, which means outdoor dining and summer recipes! Today I'm bringing you some potato salad. I used the back of the ingredients list to make a half sheet recipe, printed a photo, and stuck on a few stickers. Bonus - you can turn it around for the list and write down what you need when you go grocery shopping!  

These potatoes go great as a side for your summer dish or you can make a batch to bring to a potluck. What's your favorite summer side? Savory or sweet? Whatever it is, I hope you get to eat it with people whose company you enjoy! 

Ingredients: 

3 lb Small potatoes
2 tbs Olive oil
1 tsp Salt
½ tsp Pepper
1 ½ cup Mayo
¼ cup Dijon mustard
½ cup Chopped onion
½ tsp Paprika
¼ tsp Cayenne
6 Eggs, chopped
2 Celery ribs
Minced chives

Directions: 

  1. Toss potatoes in oil, salt, and pepper. Place in grill basket. Grill, covered over medium heat for 20-25 minutes. 
  2. Transfer to large bowl and cool slightly.
  3. In a small bowl, mix next 5 ingredients. Add to potatoes with eggs and celery; toss to combine.
  4. Cover and refrigerate with 1-2 hours.
 

LAYERED NACHO DIP

I love potlucks and could never have one without nachos and dip! My mom has been doing this delicious dip for as long as I can remember (still does) and I can never help myself but making it when I'm invited to a gathering.  
 
It's so simple and easy to make and so delicious to eat. After you eat this, you'll never stop wanting it. I used my Recipe Organizer and the ingredients list to always have this recipe handy!  
 
Ingredients: 
1 cup of Philadelphia Cream Cheese 
1/2 cup Sour cream 
1/4 cup Mayo 
1 cup Salsa  
2 cups Mozzarella cheese (shredded) 
2 Tomatoes (chopped) 
2 Green onions (chopped) 
1/4 cup Green olives (chopped) 
1 bag of Nachos  
 
Directions: 

  1. Mix the cream cheese, the sour cream and the mayo together and layer the mix onto the serving plate.  
  2. Add the salsa on top.  
  3. Add the shredded cheese, the tomatoes, the onions and the olives on the top.
  4. Keep in the fridge until ready to serve.

    Love this! I’m new to planning overall, but I’m not new to meal planning. Just putting the two together! The potato salad sounds amazing, and thanks for sharing how to best use your happy planner to keep track of it!

    These recipes are easy peasy not only to prepare but to also enter into my happy planner recipe book. I am a vegan but these recipes are, however, an easy transition there too!
